As autumn sets in, I turn to richer, heartier food. They tend to provide the opportunity to slow down and take my time.
Fall provides a bounty of produce, including late corn, apples and pears, squash, and more. And while I'm going to deliberately skip that whole pumpkin spice thing, pumpkin-based savoury dishes are incredible as well.
Here are a few favorites - some are more challenging, others are super easy, but they're all delicious and rewarding.
Kadu Bouranee: Afghan sauteed pumpkin. Easy and incredibly good. Bonus is that pumpkin can be swapped out for pre-cut butternut squash.
Apple Dumplings: My husband's mother made these every Halloween as dinner before the kids went trick or treating as a way to ensure they wouldn't load up on candy. This recipe is easily simplified by using store-bought crescent roll dough. The syrup can also be replaced with ice cream or an unsweetened whipped cream if you'd prefer it less sweet.
Pumpkin Soup: Ready to have your mind blown? Soup in the pumpkin. And by "soup," we mean loads of cheese.
Mushroom Soup Gratinee: Think of this as an upgraded French onion soup. It's easily vegan by just skipping the cheese.
Oeufs en Meurette: Don't let the ingredients list intimidate you: you can usually buy pre-cut mirepoix. And this is also easily vegetarian by skipping the lardons and subbing mushroom stock instead of chicken or veal. It's easy and so very satisfying.
